Ingredients:
- 1/2 cup chia seeds
- 2 cups unsweetened almond milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1 cup fresh strawberries, diced
- 1/2 cup fresh blueberries
- 1/2 cup mango, diced
- 1 tsp lemon juice
Instructions:
- In a medium mixing bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, and cinnamon. Whisk vigorously for 1-2 minutes until the mixture is well-combined and no dry clumps of seeds remain.
- Let the mixture sit at room temperature for 10 minutes. Use a fork to stir the pudding again, scraping the bottom and sides of the bowl to ensure a velvety, non-clumpy consistency.
- Divide the mixture evenly among 4 glass jars. Gently fold in a few berries or layer the diced strawberries, blueberries, and mango on top of the pudding.
- Seal the lids tightly and refrigerate for at least 4 hours, or overnight for the thickest texture.
