Ingredients:

  • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 cup fresh strawberries, diced
  • 1/2 cup fresh blueberries
  • 1/2 cup mango, diced
  • 1 tsp lemon juice

Instructions:

  1. In a medium mixing bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, and cinnamon. Whisk vigorously for 1-2 minutes until the mixture is well-combined and no dry clumps of seeds remain.
  2. Let the mixture sit at room temperature for 10 minutes. Use a fork to stir the pudding again, scraping the bottom and sides of the bowl to ensure a velvety, non-clumpy consistency.
  3. Divide the mixture evenly among 4 glass jars. Gently fold in a few berries or layer the diced strawberries, blueberries, and mango on top of the pudding.
  4. Seal the lids tightly and refrigerate for at least 4 hours, or overnight for the thickest texture.
