Ingredients:

  • 2 whole bulbs of garlic (about 300g)
  • 1 tablespoon olive oil (15ml)
  • 1 tablespoon unsalted butter (14g)
  • 1/2 cup cream cheese (113g), softened
  • 1/4 cup Greek yogurt (60g)
  • 1 teaspoon lemon juice (5ml)
  • 1/2 teaspoon salt (2g)
  • 1/4 teaspoon black pepper (1g)
  • 1 teaspoon fresh thyme leaves (3g)
  • Optional: 2 tablespoons fresh parsley for garnish (6g)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Trim the tops of the garlic bulbs to expose the cloves. Drizzle with olive oil and wrap in foil or place in a baking dish.
  3. Bake in the preheated oven for 35-45 minutes until soft and caramelized. Cool slightly before handling.
  4. In a mixing bowl, combine cream cheese, softened butter, and Greek yogurt. Squeeze roasted garlic cloves into the bowl, discarding skins.
  5. Add lemon juice, salt, pepper, and thyme. Blend until smooth using a food processor or blender.
  6. Taste and adjust seasoning as needed.
  7. Transfer to a serving dish, spreading evenly. Garnish with fresh parsley if desired.
