Ingredients:
- 2 whole bulbs of garlic (about 300g)
- 1 tablespoon olive oil (15ml)
- 1 tablespoon unsalted butter (14g)
- 1/2 cup cream cheese (113g), softened
- 1/4 cup Greek yogurt (60g)
- 1 teaspoon lemon juice (5ml)
- 1/2 teaspoon salt (2g)
- 1/4 teaspoon black pepper (1g)
- 1 teaspoon fresh thyme leaves (3g)
- Optional: 2 tablespoons fresh parsley for garnish (6g)
Instructions:
- Preheat the oven to 400°F (200°C).
- Trim the tops of the garlic bulbs to expose the cloves. Drizzle with olive oil and wrap in foil or place in a baking dish.
- Bake in the preheated oven for 35-45 minutes until soft and caramelized. Cool slightly before handling.
- In a mixing bowl, combine cream cheese, softened butter, and Greek yogurt. Squeeze roasted garlic cloves into the bowl, discarding skins.
- Add lemon juice, salt, pepper, and thyme. Blend until smooth using a food processor or blender.
- Taste and adjust seasoning as needed.
- Transfer to a serving dish, spreading evenly. Garnish with fresh parsley if desired.
