Ingredients:

  • 4 (6-ounce/170g) salmon fillets, skin on or off
  • 1 tablespoon/15 ml olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/4 cup/60 ml fresh parsley, chopped
  • 2 tablespoons/30 ml fresh dill, chopped
  • 1 tablespoon/15 ml fresh thyme leaves
  • 1/2 teaspoon/2.5 ml sea salt
  • 1/4 teaspoon/1.25 ml black pepper
  • 1/4 teaspoon/1.25 ml red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine the minced garlic, parsley, dill, thyme, lemon zest, salt, pepper, and red pepper flakes (if using).
  3. Pat the salmon fillets dry with paper towels. Place them on a baking sheet lined with parchment paper (if using).
  4. Drizzle the salmon fillets with olive oil and lemon juice.
  5. Spread the herb mixture evenly over the top of each salmon fillet, pressing gently to adhere.
  6. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Let the salmon rest for a few minutes before serving. Enjoy your Whole30 Salmon!
