Ingredients:
- 4 (6-ounce/170g) salmon fillets, skin on or off
- 1 tablespoon/15 ml olive oil
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1/4 cup/60 ml fresh parsley, chopped
- 2 tablespoons/30 ml fresh dill, chopped
- 1 tablespoon/15 ml fresh thyme leaves
- 1/2 teaspoon/2.5 ml sea salt
- 1/4 teaspoon/1.25 ml black pepper
- 1/4 teaspoon/1.25 ml red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine the minced garlic, parsley, dill, thyme, lemon zest, salt, pepper, and red pepper flakes (if using).
- Pat the salmon fillets dry with paper towels. Place them on a baking sheet lined with parchment paper (if using).
- Drizzle the salmon fillets with olive oil and lemon juice.
- Spread the herb mixture evenly over the top of each salmon fillet, pressing gently to adhere.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Let the salmon rest for a few minutes before serving. Enjoy your Whole30 Salmon!
