Ingredients:
- 12 oz (340 g) spaghetti or linguine
- 6 cloves garlic, minced (about 2 tbsp)
- 1/2 cup (120 ml) extra virgin olive oil
- 1/4 tsp red pepper flakes (optional, adjust to taste)
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1/4 cup (5 g) fresh parsley, chopped
- 1/2 cup (50 g) grated Parmesan cheese (optional, for serving)
Instructions:
- Fill a large pot with water, season generously with salt, and bring to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes (avoid browning). Stir in red pepper flakes (if using) and season with salt and black pepper.
- Add drained pasta to the skillet, tossing to coat in garlic oil. If needed, gradually incorporate reserved pasta water until desired consistency is reached.
- Remove from heat, then toss in chopped parsley. Serve immediately, topped with optional Parmesan if desired.
