Ingredients:

  • 12 oz (340 g) spaghetti or linguine
  • 6 cloves garlic, minced (about 2 tbsp)
  • 1/2 cup (120 ml) extra virgin olive oil
  • 1/4 tsp red pepper flakes (optional, adjust to taste)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/4 cup (5 g) fresh parsley, chopped
  • 1/2 cup (50 g) grated Parmesan cheese (optional, for serving)

Instructions:

  1. Fill a large pot with water, season generously with salt, and bring to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes (avoid browning). Stir in red pepper flakes (if using) and season with salt and black pepper.
  3. Add drained pasta to the skillet, tossing to coat in garlic oil. If needed, gradually incorporate reserved pasta water until desired consistency is reached.
  4. Remove from heat, then toss in chopped parsley. Serve immediately, topped with optional Parmesan if desired.
