Ingredients:

  • 2 ½ cups (313g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • ½ teaspoon (2g) baking soda
  • ½ teaspoon (2g) salt
  • 1 tablespoon (12g) ground cinnamon
  • 1 cup (226g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • ¼ cup (50g) granulated sugar (for coating)
  • 1 tablespoon (12g) ground cinnamon (for coating)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract; mix until well combined.
  5. Gradually add the dry ingredients to the creamed mixture; mix until just combined.
  6. In a separate bowl, mix granulated sugar and cinnamon for coating.
  7. Use a cookie scoop to portion out dough, roll into balls, and coat in cinnamon sugar mixture.
  8. Place cookie dough balls onto the prepared baking sheet, spacing them apart. Bake for 20-25 minutes, or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.
