Ingredients:
- 2 ½ cups (313g) all-purpose flour
- 1 teaspoon (5g) baking powder
- ½ teaspoon (2g) baking soda
- ½ teaspoon (2g) salt
- 1 tablespoon (12g) ground cinnamon
- 1 cup (226g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- ¼ cup (50g) granulated sugar (for coating)
- 1 tablespoon (12g) ground cinnamon (for coating)
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract; mix until well combined.
- Gradually add the dry ingredients to the creamed mixture; mix until just combined.
- In a separate bowl, mix granulated sugar and cinnamon for coating.
- Use a cookie scoop to portion out dough, roll into balls, and coat in cinnamon sugar mixture.
- Place cookie dough balls onto the prepared baking sheet, spacing them apart. Bake for 20-25 minutes, or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.
