Ingredients:
- 2 medium sweet potatoes (about 1 pound / 450 grams)
- 1 cup (240 ml) filtered water
- 1 tablespoon fresh lime juice (about ½ lime)
- 1-2 tablespoons honey or maple syrup (to taste)
- 1 tsp ground ginger or 1 tablespoon fresh ginger (peeled and grated)
- ½ teaspoon ground cinnamon
- ½ teaspoon sea salt
- ¼ teaspoon cayenne pepper (optional, for heat)
- Fresh mint or cilantro leaves (for garnish)
Instructions:
- Preheat the oven to 400°F (200°C).
- Peel and chop the sweet potatoes into 1-inch cubes.
- Spread sweet potato cubes on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with salt, and toss. Roast for 25-30 minutes or until tender and slightly caramelized.
- Allow roasted sweet potatoes to cool for about 10 minutes.
- In a blender, combine roasted sweet potatoes, water, lime juice, honey or maple syrup, ginger, cinnamon, and cayenne (if using).
- Blend on high speed until the mixture is creamy and smooth. Adjust sweetness and seasoning to taste.
- Pour the elixir into glasses and garnish with fresh mint or cilantro leaves.
- Serve chilled or at room temperature.
