Ingredients:

  • 2 medium sweet potatoes (about 1 pound / 450 grams)
  • 1 cup (240 ml) filtered water
  • 1 tablespoon fresh lime juice (about ½ lime)
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1 tsp ground ginger or 1 tablespoon fresh ginger (peeled and grated)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • Fresh mint or cilantro leaves (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into 1-inch cubes.
  3. Spread sweet potato cubes on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with salt, and toss. Roast for 25-30 minutes or until tender and slightly caramelized.
  4. Allow roasted sweet potatoes to cool for about 10 minutes.
  5. In a blender, combine roasted sweet potatoes, water, lime juice, honey or maple syrup, ginger, cinnamon, and cayenne (if using).
  6. Blend on high speed until the mixture is creamy and smooth. Adjust sweetness and seasoning to taste.
  7. Pour the elixir into glasses and garnish with fresh mint or cilantro leaves.
  8. Serve chilled or at room temperature.
