Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 cup (130g) Granny Smith or Fuji apples, peeled and finely diced
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk
- 1 tbsp (14g) melted unsalted butter
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Peel, core, and dice apples into uniform pieces approximately 1/8 inch in size. Note: Consistency ensures they all cook at the same rate.
- Beat the softened butter and brown sugar on medium high speed until pale and fluffy. Mix in the egg and vanilla extract until smooth.
- Whisk together flour, baking soda, cinnamon, and salt in a separate bowl.
- Gradually add dry ingredients to the wet mixture on low speed.
- Gently fold in the diced apples using a spatula. Note: Don't overmix or the cookies will get tough.
- Scoop rounded tablespoons of dough onto a parchment lined baking sheet.
- Bake at 350°F (175°C) for 12–15 minutes until edges are set and lightly browned.
- Whisk together powdered sugar, milk, melted butter, and vanilla extract until smooth.
- Let cookies cool for 5 minutes, then drizzle or dip with the glaze.
- Let the glaze set for 10 minutes before serving.
