Ingredients:
- 1.5 cups (210g) Gluten-free all-purpose flour blend
- 0.5 cup (45g) Unsweetened cocoa powder
- 1 tsp (5g) Baking soda
- 0.5 tsp (3g) Salt
- 0.5 cup (110g) Unsalted butter, melted and cooled
- 0.75 cup (150g) Brown sugar, packed
- 1 large (50g) Egg, room temperature
- 1 tsp (5ml) Vanilla extract
- 1.5 cups (150g) Grated zucchini, loosely packed
- 0.75 cup (130g) Semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper or grease it thoroughly with butter.
- Grate the zucchini using the small holes of a box grater to achieve a fine shred.
- In a large mixing bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt until no large lumps remain.
- Stir in the melted butter and brown sugar until the mixture looks like coarse sand.
- Add the egg and vanilla extract, stirring until a thick paste forms.
- Fold in the grated zucchini and half of the semi-sweet chocolate chips until just combined.
- Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining chocolate chips over the surface.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
