Ingredients:

  • 1 baguette (about 14-16 inches long)
  • 2 tablespoons olive oil
  • 4 ounces goat cheese, softened
  • 1/2 cup pistachios, shelled and coarsely chopped
  • 2 tablespoons honey (optional, for drizzling)
  • Fresh herbs (such as chives or basil), for garnish
  • Sea salt and freshly cracked black pepper, to taste
  • 1 cup cherry tomatoes, halved (optional)
  • 1 tablespoon balsamic vinegar (optional)
  • 1 small garlic clove, minced (optional)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut the baguette diagonally into slices about 1/2 inch thick and place them on a baking sheet.
  3. Brush one side of each slice with olive oil and toast in the preheated oven for about 5-7 minutes, or until golden brown.
  4. In a bowl, mix the softened goat cheese with a pinch of sea salt and cracked black pepper. Set aside.
  5. Coarsely chop the shelled pistachios if they arent already chopped.
  6. Spread a generous layer of the goat cheese mixture on the toasted side of each baguette slice. Top with coarsely chopped pistachios.
  7. In a separate bowl, combine the cherry tomatoes, balsamic vinegar, olive oil, and minced garlic. Spoon the tomato mixture over the bruschetta if using.
  8. Drizzle with honey for added sweetness if desired and garnish with fresh herbs.
  9. Serve immediately while warm, and enjoy!
