Ingredients:
- 1 baguette (about 14-16 inches long)
- 2 tablespoons olive oil
- 4 ounces goat cheese, softened
- 1/2 cup pistachios, shelled and coarsely chopped
- 2 tablespoons honey (optional, for drizzling)
- Fresh herbs (such as chives or basil), for garnish
- Sea salt and freshly cracked black pepper, to taste
- 1 cup cherry tomatoes, halved (optional)
- 1 tablespoon balsamic vinegar (optional)
- 1 small garlic clove, minced (optional)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut the baguette diagonally into slices about 1/2 inch thick and place them on a baking sheet.
- Brush one side of each slice with olive oil and toast in the preheated oven for about 5-7 minutes, or until golden brown.
- In a bowl, mix the softened goat cheese with a pinch of sea salt and cracked black pepper. Set aside.
- Coarsely chop the shelled pistachios if they arent already chopped.
- Spread a generous layer of the goat cheese mixture on the toasted side of each baguette slice. Top with coarsely chopped pistachios.
- In a separate bowl, combine the cherry tomatoes, balsamic vinegar, olive oil, and minced garlic. Spoon the tomato mixture over the bruschetta if using.
- Drizzle with honey for added sweetness if desired and garnish with fresh herbs.
- Serve immediately while warm, and enjoy!
