Ingredients:
- 2 large sweet onions (about 500g)
- 1 cup all-purpose flour (120g)
- 1 cup breadcrumbs (Panko preferred for extra crunch) (120g)
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup buttermilk (240ml)
- Oil for frying (about 2-3 cups or 480-720ml)
Instructions:
- Peel and slice the onions into 1/4-inch thick rings. Separate the rings and set aside.
- In a large bowl, whisk together flour, baking powder, garlic powder, paprika, salt, and pepper. Pour in buttermilk and mix until smooth.
- In a shallow dish, place breadcrumbs.
- Dip each onion ring into the batter, ensuring it is fully coated, then let excess drip off. Dredge in breadcrumbs, pressing gently to adhere.
- Place the coated rings on a baking sheet and chill in the refrigerator for 30 minutes.
- In a deep skillet or fryer, heat oil to 350°F (175°C).
- Carefully add a few rings at a time to the hot oil. Fry for about 3-4 minutes until golden brown, flipping halfway. Use a slotted spoon to remove and drain on paper towels.
- Serve the fried onion rings hot, with your choice of dipping sauce.
