Ingredients:

  • 2 large sweet onions (about 500g)
  • 1 cup all-purpose flour (120g)
  • 1 cup breadcrumbs (Panko preferred for extra crunch) (120g)
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk (240ml)
  • Oil for frying (about 2-3 cups or 480-720ml)

Instructions:

  1. Peel and slice the onions into 1/4-inch thick rings. Separate the rings and set aside.
  2. In a large bowl, whisk together flour, baking powder, garlic powder, paprika, salt, and pepper. Pour in buttermilk and mix until smooth.
  3. In a shallow dish, place breadcrumbs.
  4. Dip each onion ring into the batter, ensuring it is fully coated, then let excess drip off. Dredge in breadcrumbs, pressing gently to adhere.
  5. Place the coated rings on a baking sheet and chill in the refrigerator for 30 minutes.
  6. In a deep skillet or fryer, heat oil to 350°F (175°C).
  7. Carefully add a few rings at a time to the hot oil. Fry for about 3-4 minutes until golden brown, flipping halfway. Use a slotted spoon to remove and drain on paper towels.
  8. Serve the fried onion rings hot, with your choice of dipping sauce.
