Ingredients:

  • 6 cups (300g) Golden Grahams cereal
  • 12 oz (340g) Mini marshmallows
  • 1/2 cup (113g) Unsalted butter
  • 1 cup (170g) Semi-sweet chocolate chips
  • 1 tsp (5ml) Vanilla extract
  • 1/4 tsp (1.5g) Fine sea salt

Instructions:

  1. Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large microwave-safe glass bowl, combine the unsalted butter and 11 oz of mini marshmallows. Microwave in 30-second bursts, stirring in between, until the mixture is velvety and smooth.
  3. Immediately stir the vanilla extract and fine sea salt into the melted marshmallow mixture.
  4. Pour the melted mixture over the Golden Grahams cereal and toss gently with a spatula until every piece of cereal is evenly coated.
  5. Fold in the semi-sweet chocolate chips while the mixture is still warm to allow them to soften slightly.
  6. Transfer the mixture into the prepared pan and press down firmly with the back of a spatula. If reserving marshmallows, press them into the top now.
  7. Allow the bars to set at room temperature for 10 minutes before slicing with a warm knife.
