Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 4 tbsp (57g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 0.5 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- 0.5 cup (45g) Dutch-process cocoa powder
- 0.5 cup (65g) all-purpose flour
- 0.25 tsp (1.5g) salt
- 0.5 cup (85g) bittersweet chocolate chips
- 1 cup (100g) mini marshmallows
- 0.25 cup (40g) milk chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Combine graham cracker crumbs, 4 tbsp melted butter, and 2 tbsp sugar in a bowl.
- Press the graham cracker mixture firmly into the bottom of the pan using the back of a spoon until a flat, even layer forms.
- Bake the crust for 8 minutes, then remove from the oven and set aside.
- In a large bowl, whisk 0.5 cup melted butter and 1 cup sugar until well combined.
- Beat in eggs and vanilla extract until the mixture is glossy and smooth.
- Sift in cocoa powder, flour, and salt; fold gently with a spatula until just combined to ensure a fudgy texture.
- Fold in bittersweet chocolate chips and pour the batter over the pre-baked graham crust.
- Bake the brownies until the center is set but still slightly gooey.
- During the final 5-8 minutes of baking, top the brownies with mini marshmallows and milk chocolate chips.
- Finish under the oven broiler for 1-2 minutes until the marshmallows are toasted and charred on top.
