Ingredients:

  • 2 cups (480g) Plain Greek Yogurt
  • 3 tbsp (60ml) Honey or Maple Syrup
  • 1 tsp (5ml) Pure Vanilla Extract
  • 1/2 cup (75g) Fresh Blueberries
  • 1/2 cup (75g) Strawberries, finely diced
  • 1/4 cup (30g) Low-sugar Granola

Instructions:

  1. Whisk together the Greek yogurt, honey, and vanilla extract in a mixing bowl until the mixture is completely smooth and glossy.
  2. Place a pinch of granola at the bottom of each lined mini muffin cup to create a structural crunch.
  3. Spoon approximately 1 tablespoon of the yogurt mixture over the granola, smoothing the top with the back of a spoon.
  4. Press 2-3 pieces of diced strawberry or a single blueberry firmly into the top of each bite.
  5. Place the tin in the freezer for at least 4 hours, or until the bites are firm to the touch.
  6. Gently peel back the paper liners to release the bites from the tin.
