Ingredients:
- 2 cups (480g) Plain Greek Yogurt
- 3 tbsp (60ml) Honey or Maple Syrup
- 1 tsp (5ml) Pure Vanilla Extract
- 1/2 cup (75g) Fresh Blueberries
- 1/2 cup (75g) Strawberries, finely diced
- 1/4 cup (30g) Low-sugar Granola
Instructions:
- Whisk together the Greek yogurt, honey, and vanilla extract in a mixing bowl until the mixture is completely smooth and glossy.
- Place a pinch of granola at the bottom of each lined mini muffin cup to create a structural crunch.
- Spoon approximately 1 tablespoon of the yogurt mixture over the granola, smoothing the top with the back of a spoon.
- Press 2-3 pieces of diced strawberry or a single blueberry firmly into the top of each bite.
- Place the tin in the freezer for at least 4 hours, or until the bites are firm to the touch.
- Gently peel back the paper liners to release the bites from the tin.
