Ingredients:
- 1 ripe avocado, halved and pitted (about 200g)
- ¼ cup plain Greek yogurt (60g)
- 2 tablespoons fresh lemon juice (30ml)
- 1 clove garlic, minced
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh chives, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and black pepper to taste
- 4 slices of whole-grain bread (about 120g total)
- 1 cup fresh spinach leaves (30g)
- ½ cup cucumber, thinly sliced (50g)
- ¼ cup sprouts (optional, about 10g)
- Red pepper flakes (optional, to taste)
Instructions:
- Scoop out avocado flesh into a mixing bowl.
- Add Greek yogurt, lemon juice, minced garlic, basil, chives, and parsley.
- Mash or blend until smooth and creamy.
- Season with salt and pepper to taste.
- Spread a generous layer of the avocado dressing onto each slice of bread.
- Layer fresh spinach on two slices of bread.
- Add cucumber slices and sprouts (if using) on top of the spinach.
- Sprinkle with red pepper flakes if you prefer a little heat.
- Place the second slice of bread on top, dressing side down.
- Slice each sandwich in half and serve immediately.
