Ingredients:

  • 1 ripe avocado, halved and pitted (about 200g)
  • ¼ cup plain Greek yogurt (60g)
  • 2 tablespoons fresh lemon juice (30ml)
  • 1 clove garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste
  • 4 slices of whole-grain bread (about 120g total)
  • 1 cup fresh spinach leaves (30g)
  • ½ cup cucumber, thinly sliced (50g)
  • ¼ cup sprouts (optional, about 10g)
  • Red pepper flakes (optional, to taste)

Instructions:

  1. Scoop out avocado flesh into a mixing bowl.
  2. Add Greek yogurt, lemon juice, minced garlic, basil, chives, and parsley.
  3. Mash or blend until smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Spread a generous layer of the avocado dressing onto each slice of bread.
  6. Layer fresh spinach on two slices of bread.
  7. Add cucumber slices and sprouts (if using) on top of the spinach.
  8. Sprinkle with red pepper flakes if you prefer a little heat.
  9. Place the second slice of bread on top, dressing side down.
  10. Slice each sandwich in half and serve immediately.
