Ingredients:

  • 8 slices of sourdough or your preferred bread
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh chives, finely chopped (or green onions)
  • Salt and pepper to taste
  • (optional) Sliced tomatoes (1 medium tomato)
  • (optional) Lettuce leaves (4 leaves)
  • (optional) Sliced cucumbers (1 small cucumber)

Instructions:

  1. Prepare the Cheese Spread: In a medium bowl, combine the softened cream cheese and shredded cheddar cheese. Add the chopped chives and season with salt and pepper. Mix well until smooth.
  2. Toast the Bread (Optional): If you prefer toasted sandwiches, preheat a skillet over medium heat. Lightly butter one side of each slice of bread. Place them butter-side down on the skillet for about two minutes or until golden brown.
  3. Assemble the Sandwiches: On four slices of bread, spread an even layer of the cheese mixture using a knife or spatula. If desired, layer sliced tomatoes, lettuce leaves, and cucumbers on top of the spread.
  4. Top Off Your Sandwiches: Place another slice of bread on top to create a sandwich. If you toasted earlier, place it on top butter-side up.
  5. Cook Your Sandwiches: For Grilled Cheese Style: Heat your skillet over medium heat again if necessary. Grill each sandwich for about three to four minutes per side until golden brown and crispy; press down gently with a spatula to help melt the cheeses inside.
  6. Slice & Serve: Once cooked through
