Ingredients:
- 2 dozen fresh clams (littleneck or steamers)
- 2 lbs mussels, cleaned and debearded
- 1 lb shrimp, peeled and deveined
- 1 lb smoked sausage, sliced into rounds
- 4 ears of corn, husked and cut in half
- 1 lemon, sliced
- Fresh herbs (such as thyme or parsley)
- (For the Seasoning) 4 tablespoons olive oil
- (For the Seasoning) 3 cloves garlic, minced
- (For the Seasoning) Salt and pepper to taste
- (Optional) Red pepper flakes for heat
Instructions:
- Clean the Shellfish: Rinse the clams and mussels under cold water to remove any sand. Discard any that are open before cooking.
- Prep Vegetables: Husk corn and cut it in half. Slice lemon into rounds.
- Lay Out Foil: Take a large piece of heavy-duty aluminum foil (about three feet long) or use a grilling basket.
- Layer Ingredients: In the center of the foil, layer your ingredients starting with sausage slices at the bottom followed by corn pieces, clams, mussels, shrimp, garlic, herbs, salt & pepper to taste.
- Drizzle Oil: Drizzle olive oil over everything plus some optional red pepper flakes if desired.
- Add Lemon Slices: Place lemon slices on top for added flavor.
- Seal Packets: Carefully fold up each side of the foil to create a sealed packet ensuring theres space inside for steam but be careful not to puncture it.
- Preheat Your Grill: Preheat your grill to medium-high heat (about 375°F - 400°F).
- Cook on Grill: Place packets directly on grill grates. Close lid and cook for about 15–20 minutes until all shellfish have opened up; discard any that do not open after cooking.
