  • (For the Seasoning) 3 cloves garlic, minced
  • (For the Seasoning) Salt and pepper to taste
  • (Optional) Red pepper flakes for heat

  1. Clean the Shellfish: Rinse the clams and mussels under cold water to remove any sand. Discard any that are open before cooking.
  2. Prep Vegetables: Husk corn and cut it in half. Slice lemon into rounds.
  3. Lay Out Foil: Take a large piece of heavy-duty aluminum foil (about three feet long) or use a grilling basket.
  4. Layer Ingredients: In the center of the foil, layer your ingredients starting with sausage slices at the bottom followed by corn pieces, clams, mussels, shrimp, garlic, herbs, salt & pepper to taste.
  5. Drizzle Oil: Drizzle olive oil over everything plus some optional red pepper flakes if desired.
  6. Add Lemon Slices: Place lemon slices on top for added flavor.
  7. Seal Packets: Carefully fold up each side of the foil to create a sealed packet ensuring theres space inside for steam but be careful not to puncture it.
  8. Preheat Your Grill: Preheat your grill to medium-high heat (about 375°F - 400°F).
  9. Cook on Grill: Place packets directly on grill grates. Close lid and cook for about 15–20 minutes until all shellfish have opened up; discard any that do not open after cooking.
