Ingredients:

  • 4 ears fresh corn, shucked
  • 2 tablespoons olive oil
  • 1/2 cup red onion, finely diced
  • 1 red bell pepper, cored, seeded, and finely diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Brush corn with olive oil and season with salt and pepper.
  2. Grill over medium heat, turning occasionally, until kernels are lightly charred and tender (about 10-15 minutes).
  3. Let the corn cool slightly, then cut the kernels off the cob.
  4. In a large bowl, combine the grilled corn kernels, red onion, red bell pepper, feta cheese, and mint.
  5. In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve immediately or chill for later. It's great as one of the sides for grilled chicken.
