Ingredients:
- 4 ears fresh corn, shucked
- 2 tablespoons olive oil
- 1/2 cup red onion, finely diced
- 1 red bell pepper, cored, seeded, and finely diced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Brush corn with olive oil and season with salt and pepper.
- Grill over medium heat, turning occasionally, until kernels are lightly charred and tender (about 10-15 minutes).
- Let the corn cool slightly, then cut the kernels off the cob.
- In a large bowl, combine the grilled corn kernels, red onion, red bell pepper, feta cheese, and mint.
- In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for later. It's great as one of the sides for grilled chicken.
