Ingredients:
- 1.5 lbs (680g) Yukon Gold potatoes, cut into 1-inch (2.5cm) cubes
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/4 cup (60ml) olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions:
- In a large bowl, combine the cubed potatoes, minced garlic, rosemary, thyme, parsley, oregano, olive oil, salt, pepper, and red pepper flakes (if using). Toss well to ensure the potatoes are evenly coated.
- Preheat the grill to medium heat (about 350-400°F or 175-205°C).
- Place the potato mixture in a grilling basket or create a foil packet with small holes for ventilation.
- Place the grilling basket (or foil packet) on the preheated grill. Cook for 25-30 minutes, tossing occasionally, until the potatoes are tender and slightly browned.
- Remove from the grill and serve immediately.
