Ingredients:
- 5 oz (140g) Halloumi cheese, sliced into ½-inch (1.25cm) thick pieces
- 2 medium peaches, pitted and cut into wedges
- 5 oz (140g) Arugula (rocket)
- 1/4 cup (30g) Sliced almonds, toasted
- 1/4 cup (approx. 5g) Fresh mint leaves, chopped (optional garnish)
- 2 tablespoons (30ml) Lime juice, freshly squeezed
- 1 tablespoon (15ml) Olive oil, extra virgin
- 1 tablespoon (15ml) Honey
- 1/2 teaspoon (2.5ml) Dijon mustard
- Pinch of salt
- Pinch of black pepper
Instructions:
- Prepare the Dressing: In a small mixing bowl, whisk together lime juice, olive oil, honey, Dijon mustard, salt, and pepper until emulsified. Set aside.
- Grill the Halloumi: Preheat the grill pan or outdoor grill to medium-high heat. Lightly brush the halloumi slices with olive oil (optional). Grill for 2-3 minutes per side, or until golden brown and slightly softened.
- Grill the Peaches: Brush the peach wedges with a little olive oil (optional). Grill for 2-3 minutes per side, or until grill marks appear and peaches are slightly softened.
- Assemble the Salad: In a large bowl, combine arugula, grilled halloumi, grilled peaches, and toasted almonds.
- Dress the Salad: Pour the honey-lime dressing over the salad and gently toss to combine.
- Garnish and Serve: Garnish with fresh mint (if using) and serve immediately.
