Ingredients:

  • 5 oz (140g) Halloumi cheese, sliced into ½-inch (1.25cm) thick pieces
  • 2 medium peaches, pitted and cut into wedges
  • 5 oz (140g) Arugula (rocket)
  • 1/4 cup (30g) Sliced almonds, toasted
  • 1/4 cup (approx. 5g) Fresh mint leaves, chopped (optional garnish)
  • 2 tablespoons (30ml) Lime juice, freshly squeezed
  • 1 tablespoon (15ml) Olive oil, extra virgin
  • 1 tablespoon (15ml) Honey
  • 1/2 teaspoon (2.5ml) Dijon mustard
  • Pinch of salt
  • Pinch of black pepper

Instructions:

  1. Prepare the Dressing: In a small mixing bowl, whisk together lime juice, olive oil, honey, Dijon mustard, salt, and pepper until emulsified. Set aside.
  2. Grill the Halloumi: Preheat the grill pan or outdoor grill to medium-high heat. Lightly brush the halloumi slices with olive oil (optional). Grill for 2-3 minutes per side, or until golden brown and slightly softened.
  3. Grill the Peaches: Brush the peach wedges with a little olive oil (optional). Grill for 2-3 minutes per side, or until grill marks appear and peaches are slightly softened.
  4. Assemble the Salad: In a large bowl, combine arugula, grilled halloumi, grilled peaches, and toasted almonds.
  5. Dress the Salad: Pour the honey-lime dressing over the salad and gently toss to combine.
  6. Garnish and Serve: Garnish with fresh mint (if using) and serve immediately.
