Ingredients:

  • ¼ cup (60 ml) balsamic vinegar
  • 3 tablespoons (45 ml) olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 large portobello mushrooms (about 200g each), stems removed and cleaned
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a mixing bowl, combine balsamic vinegar, olive oil, garlic, oregano, thyme, salt, and pepper. Whisk until well combined.
  2. Place the cleaned portobello mushrooms in a shallow dish. Pour the marinade over them, ensuring all sides are coated. Let marinate for 30 minutes.
  3. Heat the grill to medium-high (about 375°F/190°C).
  4. Using tongs, place the marinated mushrooms on the grill, gill side down. Grill for 5-7 minutes.
  5. Flip and cook for an additional 5-7 minutes, or until mushrooms are tender and have grill marks.
  6. Remove from the grill, garnish with fresh parsley if desired, and serve immediately.
