Ingredients:
- 2 medium zucchini (approx. 1 lb / 450g), sliced into 1/4-inch planks
- 2 tbsp olive oil
- ½ cup grated Parmesan cheese (50g)
- 2 cloves garlic, minced (10g)
- 1 tbsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh lemon juice
Instructions:
- In a small bowl, combine the Parmesan, minced garlic, oregano, salt, and pepper.
- Brush both sides of the zucchini planks with olive oil and press each slice firmly into the Parmesan mixture to create a thin, even coating.
- Preheat your grill to high heat and place the zucchini slices directly on the grates.
- Grill for 3–4 minutes per side until deep brown char marks appear and the zucchini is tender but still has a slight snap.
- Ensure the cheese is bubbling and golden during the last minute of grilling, then remove from heat immediately.
- Drizzle with fresh lemon juice just before plating.
