Ingredients:

  • 2 medium zucchini (approx. 1 lb / 450g), sliced into 1/4-inch planks
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese (50g)
  • 2 cloves garlic, minced (10g)
  • 1 tbsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions:

  1. In a small bowl, combine the Parmesan, minced garlic, oregano, salt, and pepper.
  2. Brush both sides of the zucchini planks with olive oil and press each slice firmly into the Parmesan mixture to create a thin, even coating.
  3. Preheat your grill to high heat and place the zucchini slices directly on the grates.
  4. Grill for 3–4 minutes per side until deep brown char marks appear and the zucchini is tender but still has a slight snap.
  5. Ensure the cheese is bubbling and golden during the last minute of grilling, then remove from heat immediately.
  6. Drizzle with fresh lemon juice just before plating.
