Ingredients:
- 6 oz deli turkey breast
- 2 large hard-boiled eggs
- 1 cup English cucumber
- 1/2 cup baby carrots
- 1/2 cup cherry tomatoes
- 3 tbsp roasted garlic hummus
- 1 oz raw almonds, unsalted
- 30g whole grain seed crackers
- 1 small apple
Instructions:
- Wash all produce under cold water. Slice the cucumber into uniform rounds and halve the cherry tomatoes. Slice the apple and toss with a squeeze of lemon juice to prevent browning.
- Place the whole grain crackers and almonds in the smallest, driest compartment of the bento box. Add the rolled turkey breast and hard-boiled eggs to the main protein section.
- Arrange the carrots, cucumbers, and tomatoes in the remaining space, ensuring they do not touch the crackers.
- Scoop the hummus into a small leak-proof container or the designated bento dip-well. Close the lid firmly and store in the refrigerator immediately.
