Ingredients:

  • 6 oz deli turkey breast
  • 2 large hard-boiled eggs
  • 1 cup English cucumber
  • 1/2 cup baby carrots
  • 1/2 cup cherry tomatoes
  • 3 tbsp roasted garlic hummus
  • 1 oz raw almonds, unsalted
  • 30g whole grain seed crackers
  • 1 small apple

Instructions:

  1. Wash all produce under cold water. Slice the cucumber into uniform rounds and halve the cherry tomatoes. Slice the apple and toss with a squeeze of lemon juice to prevent browning.
  2. Place the whole grain crackers and almonds in the smallest, driest compartment of the bento box. Add the rolled turkey breast and hard-boiled eggs to the main protein section.
  3. Arrange the carrots, cucumbers, and tomatoes in the remaining space, ensuring they do not touch the crackers.
  4. Scoop the hummus into a small leak-proof container or the designated bento dip-well. Close the lid firmly and store in the refrigerator immediately.
