Ingredients:

  • 3 medium ripe bananas, mashed (340g)
  • 1/4 cup unsweetened applesauce (60ml)
  • 1/4 cup vegetable oil (60ml)
  • 1/4 cup honey or maple syrup (60ml)
  • 2 large eggs (100g), lightly beaten
  • 1 teaspoon vanilla extract (5ml)
  • 1 1/2 cups whole wheat flour (180g)
  • 1 teaspoon baking soda (5g)
  • 1/2 teaspoon baking powder (2.5g)
  • 1/4 teaspoon salt (1.5g)
  • 1/4 cup granulated sugar (50g) (Optional)
  • 1/2 cup semi-sweet chocolate chips (85g)

Instructions:

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease it well.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Add the applesauce, oil, honey/maple syrup, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and sugar (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the chocolate chips.
  7. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  8. Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
