Ingredients:
- 3 medium ripe bananas, mashed (340g)
- 1/4 cup unsweetened applesauce (60ml)
- 1/4 cup vegetable oil (60ml)
- 1/4 cup honey or maple syrup (60ml)
- 2 large eggs (100g), lightly beaten
- 1 teaspoon vanilla extract (5ml)
- 1 1/2 cups whole wheat flour (180g)
- 1 teaspoon baking soda (5g)
- 1/2 teaspoon baking powder (2.5g)
- 1/4 teaspoon salt (1.5g)
- 1/4 cup granulated sugar (50g) (Optional)
- 1/2 cup semi-sweet chocolate chips (85g)
Instructions:
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease it well.
- In a large bowl, mash the bananas until mostly smooth.
- Add the applesauce, oil, honey/maple syrup, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
- In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and sugar (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
