Ingredients:

  • 1.5 cups (180g) whole wheat pastry flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) sea salt
  • 0.5 cup (120g) unsweetened applesauce
  • 0.5 cup (115g) pure maple syrup
  • 2 large (100g) eggs
  • 1 tsp (5ml) pure vanilla extract
  • 2 cups (220g) finely shredded zucchini, squeezed dry
  • 0.5 cup (85g) dark chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. Grate the zucchini finely, place it in a clean kitchen towel, and squeeze firmly to remove excess water.
  3. In a large bowl, whisk together the whole wheat pastry flour, cocoa powder, baking soda, and sea salt until no lumps remain.
  4. Create a well in the center of the dry ingredients and add the unsweetened applesauce, maple syrup, eggs, and vanilla extract. Stir until just combined.
  5. Gently fold in the squeezed zucchini and dark chocolate chips using a spatula until no more streaks of flour are visible.
  6. Transfer the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-55 minutes, or until the edges pull slightly away from the pan and a toothpick inserted into the center comes out with a few moist crumbs.
