Ingredients:
- 1.5 cups (180g) whole wheat pastry flour
- 0.5 cup (45g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) sea salt
- 0.5 cup (120g) unsweetened applesauce
- 0.5 cup (115g) pure maple syrup
- 2 large (100g) eggs
- 1 tsp (5ml) pure vanilla extract
- 2 cups (220g) finely shredded zucchini, squeezed dry
- 0.5 cup (85g) dark chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- Grate the zucchini finely, place it in a clean kitchen towel, and squeeze firmly to remove excess water.
- In a large bowl, whisk together the whole wheat pastry flour, cocoa powder, baking soda, and sea salt until no lumps remain.
- Create a well in the center of the dry ingredients and add the unsweetened applesauce, maple syrup, eggs, and vanilla extract. Stir until just combined.
- Gently fold in the squeezed zucchini and dark chocolate chips using a spatula until no more streaks of flour are visible.
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes, or until the edges pull slightly away from the pan and a toothpick inserted into the center comes out with a few moist crumbs.
