Ingredients:
- 1 3/4 cups (175g) Rolled Oats
- 1 cup (100g) Granola
- 1/2 cup (60g) Mixed Seeds
- 1/4 cup (30g) Dried Apricots, finely chopped
- 1 teaspoon Ground Cinnamon
- 1/4 teaspoon Salt
- Zest of 1 Orange
- 1/2 cup (120ml) Honey
- 1/4 cup (60ml) Coconut Oil, melted
- 2 tablespoons Almond Butter
- 1 teaspoon Vanilla Extract
Instructions:
- Preheat oven to 325°F (160°C/Gas Mark 3). Line an 8x8 inch baking pan with parchment paper.
- In a large mixing bowl, combine oats, granola, mixed seeds, chopped dried apricots, cinnamon, salt, and orange zest.
- In a small saucepan or microwave-safe bowl, melt the honey and coconut oil. Stir in the almond butter and vanilla extract until smooth.
- Pour the melted wet ingredients over the dry ingredients. Stir well until everything is evenly coated.
- Transfer the mixture to the prepared baking pan. Press the mixture firmly and evenly into the pan.
- Bake for 25-30 minutes, or until golden brown around the edges and lightly firm in the center.
- Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into 12 even-sized flapjacks.
