Ingredients:

  • 1 3/4 cups (175g) Rolled Oats
  • 1 cup (100g) Granola
  • 1/2 cup (60g) Mixed Seeds
  • 1/4 cup (30g) Dried Apricots, finely chopped
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Salt
  • Zest of 1 Orange
  • 1/2 cup (120ml) Honey
  • 1/4 cup (60ml) Coconut Oil, melted
  • 2 tablespoons Almond Butter
  • 1 teaspoon Vanilla Extract

Instructions:

  1. Preheat oven to 325°F (160°C/Gas Mark 3). Line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine oats, granola, mixed seeds, chopped dried apricots, cinnamon, salt, and orange zest.
  3. In a small saucepan or microwave-safe bowl, melt the honey and coconut oil. Stir in the almond butter and vanilla extract until smooth.
  4. Pour the melted wet ingredients over the dry ingredients. Stir well until everything is evenly coated.
  5. Transfer the mixture to the prepared baking pan. Press the mixture firmly and evenly into the pan.
  6. Bake for 25-30 minutes, or until golden brown around the edges and lightly firm in the center.
  7. Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into 12 even-sized flapjacks.
