Ingredients:
- 3 lbs zucchini, shredded
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp kosher salt
- 2 large eggs, beaten
- 1/2 cup plain Greek yogurt
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 cup panko bread crumbs
- 1/2 cup shredded sharp cheddar cheese
- 2 tbsp unsalted butter, melted
Instructions:
- Toss shredded zucchini with salt in a colander and let sit for 10 minutes to draw out water.
- Squeeze the zucchini firmly with hands or a clean kitchen towel until no more liquid drips.
- Preheat oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
- In a large bowl, combine the squeezed zucchini, diced onion, and minced garlic.
- Stir in the beaten eggs, Greek yogurt, Parmesan, oregano, and black pepper until evenly coated.
- Transfer the mixture into the prepared baking dish and spread evenly.
- In a small bowl, mix melted butter, bread crumbs, and Cheddar cheese, then sprinkle evenly over the top.
- Bake for 25–30 minutes until the edges are bubbling and the top is golden-brown.
