Ingredients:

  • 3 lbs zucchini, shredded
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 2 large eggs, beaten
  • 1/2 cup plain Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 cup panko bread crumbs
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tbsp unsalted butter, melted

Instructions:

  1. Toss shredded zucchini with salt in a colander and let sit for 10 minutes to draw out water.
  2. Squeeze the zucchini firmly with hands or a clean kitchen towel until no more liquid drips.
  3. Preheat oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  4. In a large bowl, combine the squeezed zucchini, diced onion, and minced garlic.
  5. Stir in the beaten eggs, Greek yogurt, Parmesan, oregano, and black pepper until evenly coated.
  6. Transfer the mixture into the prepared baking dish and spread evenly.
  7. In a small bowl, mix melted butter, bread crumbs, and Cheddar cheese, then sprinkle evenly over the top.
  8. Bake for 25–30 minutes until the edges are bubbling and the top is golden-brown.
