Ingredients:
- 1 pound ziti pasta
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 15 ounces ricotta cheese
- 1 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach, chopped
- 2 cups shredded mozzarella cheese
Instructions:
- Preheat the oven to 375°F (190°C).
- Boil the ziti pasta in salted water until al dente, drain, and set aside.
- Heat olive oil in a skillet over medium heat. Sauté onion until translucent, about 5 minutes.
- Add garlic and cook until fragrant. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes.
- In a bowl, combine ricotta, Parmesan, egg, chopped spinach, salt, and pepper. Mix well.
- In the baking dish, layer half of the pasta, half of the sauce, and all of the ricotta mixture.
- Top with remaining pasta and sauce, followed by a generous layer of mozzarella cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden.
- Let it cool for 5-10 minutes before serving.
