Ingredients:

  • 1 pound ziti pasta
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 15 ounces ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped
  • 2 cups shredded mozzarella cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Boil the ziti pasta in salted water until al dente, drain, and set aside.
  3. Heat olive oil in a skillet over medium heat. Sauté onion until translucent, about 5 minutes.
  4. Add garlic and cook until fragrant. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  5. In a bowl, combine ricotta, Parmesan, egg, chopped spinach, salt, and pepper. Mix well.
  6. In the baking dish, layer half of the pasta, half of the sauce, and all of the ricotta mixture.
  7. Top with remaining pasta and sauce, followed by a generous layer of mozzarella cheese.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden.
  9. Let it cool for 5-10 minutes before serving.
