Ingredients:
- 2 cups rolled oats (180g)
- 1 cup almond flour (100g)
- 1 cup nut butter (peanut butter or almond butter) (255g)
- 1/2 cup honey or maple syrup (120ml)
- 1/4 cup coconut oil, melted (60ml)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (walnuts or almonds) (60g)
- 1/2 cup dried fruit (raisins, cranberries, or apricots) (75g)
- 1/4 cup dark chocolate chips (optional) (45g)
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine rolled oats and almond flour. Mix well.
- In a separate bowl, whisk together nut butter, honey (or maple syrup), melted coconut oil, vanilla extract, and salt until smooth.
- Pour the wet mixture into the dry ingredients. Stir until fully combined. Fold in chopped nuts, dried fruit, and chocolate chips (if using).
- Spread the mixture evenly on the prepared baking sheet, pressing down firmly.
- Bake for 20-25 minutes, until golden brown around the edges.
- Remove from the oven and let cool completely on the baking sheet. Once cooled, cut into bars or squares.
