Ingredients:

  • 2 cups rolled oats (180g)
  • 1 cup almond flour (100g)
  • 1 cup nut butter (peanut butter or almond butter) (255g)
  • 1/2 cup honey or maple syrup (120ml)
  • 1/4 cup coconut oil, melted (60ml)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or almonds) (60g)
  • 1/2 cup dried fruit (raisins, cranberries, or apricots) (75g)
  • 1/4 cup dark chocolate chips (optional) (45g)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats and almond flour. Mix well.
  3. In a separate bowl, whisk together nut butter, honey (or maple syrup), melted coconut oil, vanilla extract, and salt until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir until fully combined. Fold in chopped nuts, dried fruit, and chocolate chips (if using).
  5. Spread the mixture evenly on the prepared baking sheet, pressing down firmly.
  6. Bake for 20-25 minutes, until golden brown around the edges.
  7. Remove from the oven and let cool completely on the baking sheet. Once cooled, cut into bars or squares.
