Ingredients:
- 4 (6-ounce) walleye fillets
- 1 cup breadcrumbs, preferably panko
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon grated Parmesan cheese
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1/4 cup unsalted butter
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 garlic clove, minced
Instructions:
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or grease it lightly.
- In a mixing bowl, combine breadcrumbs, parsley, dill, Parmesan cheese, olive oil, salt, and pepper.
- Place the walleye fillets on the prepared baking sheet.
- Press the breadcrumb mixture evenly onto each fillet.
- Bake in the preheated oven for 20-25 minutes, until the fish is opaque and flakes easily with a fork.
- Meanwhile, prepare the lemon butter sauce: melt butter in a saucepan over medium heat.
- Add minced garlic and sauté for 1 minute, until fragrant.
- Stir in lemon juice, lemon zest, salt, and pepper. Remove from heat.
- Once the walleye is done, serve immediately drizzled with lemon butter sauce.
