Ingredients:

  • 4 (6-ounce) walleye fillets
  • 1 cup breadcrumbs, preferably panko
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1/4 cup unsalted butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 garlic clove, minced

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or grease it lightly.
  3. In a mixing bowl, combine breadcrumbs, parsley, dill, Parmesan cheese, olive oil, salt, and pepper.
  4. Place the walleye fillets on the prepared baking sheet.
  5. Press the breadcrumb mixture evenly onto each fillet.
  6. Bake in the preheated oven for 20-25 minutes, until the fish is opaque and flakes easily with a fork.
  7. Meanwhile, prepare the lemon butter sauce: melt butter in a saucepan over medium heat.
  8. Add minced garlic and sauté for 1 minute, until fragrant.
  9. Stir in lemon juice, lemon zest, salt, and pepper. Remove from heat.
  10. Once the walleye is done, serve immediately drizzled with lemon butter sauce.
