Ingredients:

  • 2 (6 oz) salmon fillets (skinless or with skin)
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice (15 ml)
  • Zest of 1 lemon
  • 1 teaspoon fresh thyme leaves (5 ml)
  • Salt and pepper to taste
  • Aluminum foil (enough to wrap the salmon)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut a large piece of aluminum foil (about 12 inches wide) for each fillet.
  3. In a small mixing bowl, combine olive oil, garlic, lemon juice, lemon zest, thyme, salt, and pepper.
  4. Place the salmon fillets on the foil, shiny side up.
  5. Drizzle the marinade over the salmon and rub evenly.
  6. Fold the foil around the salmon to create a sealed packet, ensuring there are no openings.
  7. Transfer the foil packets to the baking sheet.
  8. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
  9. Carefully open the foil packets, avoiding steam, and serve.
