- 2 (6 oz) salmon fillets (skinless or with skin)
- 2 tablespoons olive oil (30 ml)
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice (15 ml)
- Zest of 1 lemon
- 1 teaspoon fresh thyme leaves (5 ml)
- Salt and pepper to taste
- Aluminum foil (enough to wrap the salmon)
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut a large piece of aluminum foil (about 12 inches wide) for each fillet.
- In a small mixing bowl, combine olive oil, garlic, lemon juice, lemon zest, thyme, salt, and pepper.
- Place the salmon fillets on the foil, shiny side up.
- Drizzle the marinade over the salmon and rub evenly.
- Fold the foil around the salmon to create a sealed packet, ensuring there are no openings.
- Transfer the foil packets to the baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
- Carefully open the foil packets, avoiding steam, and serve.
