Ingredients:
- 1/2 cup (120g) plain Greek yogurt
- 1/4 cup (60g) low-fat cottage cheese
- 2 tbsp (15g) vanilla protein powder
- 3 tbsp (30g) chia seeds
- 1 cup (240ml) unsweetened soy milk
- 1 tbsp (15ml) pure maple syrup
- 1 tsp (5ml) pure vanilla extract
- 1 pinch (1g) sea salt
Instructions:
- In a medium mixing bowl, combine the Greek yogurt, blended cottage cheese, protein powder, maple syrup, vanilla extract, and salt. Whisk vigorously until the mixture is completely smooth and the protein powder is fully incorporated.
- Slowly pour in the soy milk while whisking. Once the liquid is combined, stir in the chia seeds.
- Let the mixture sit for 5 minutes, then stir again to ensure the seeds do not settle at the bottom.
- Divide the mixture evenly between three 8 oz glass jars. Cover tightly with lids and refrigerate for at least 2 hours, though overnight is preferred for optimal consistency.
