Ingredients:

  • 1 ½ cups all-purpose flour (190 g)
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed (113 g)
  • 4-6 tablespoons ice water
  • 6 large eggs
  • 1 cup heavy cream (240 ml)
  • 1 cup shredded cheese (cheddar, Swiss, or your choice) (120 g)
  • 1 cup cooked and chopped vegetables (spinach, bell peppers, mushrooms, etc.)
  • 1 cup cooked meat (ham, bacon, or sausage) (150 g) – optional
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)
  • Salt to taste

Instructions:

  1. Combine flour and salt in a mixing bowl.
  2. Cut in butter until the mixture resembles coarse crumbs.
  3. Stir in ice water one tablespoon at a time until dough forms.
  4. Shape into a disc, wrap in plastic, and chill for 30 minutes.
  5. Preheat oven to 375°F (190°C).
  6. On a floured surface, roll out the chilled dough to fit the pie dish.
  7. Transfer dough to the pie dish and trim excess.
  8. Prick the bottom of the crust with a fork.
  9. Bake for 10-12 minutes until lightly golden. Remove from oven and let cool.
  10. In a mixing bowl, whisk together eggs, cream, salt, pepper, and nutmeg.
  11. Stir in cheese, vegetables, and meat if using.
  12. Pour filling into the pre-baked crust.
  13. Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
  14. Allow quiche to cool for a few minutes before slicing. Serve warm or at room temperature.
