Ingredients:

  • 2 ½ cups (300g) all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, cold and cubed
  • 6–8 tablespoons (90-120ml) cold water
  • 1 cup (200g) brown sugar, packed
  • 2 teaspoons ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 cup (120g) powdered sugar
  • 1-2 tablespoons milk (or more for desired consistency)
  • 1 teaspoon vanilla extract
  • Optional: Sprinkles for decoration

Instructions:

  1. Combine flour, sugar, and salt in a bowl.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add cold water until dough comes together.
  4. Divide dough in half, shape into disks, and wrap in plastic wrap. Chill for 1 hour.
  5. In a bowl, mix brown sugar, cinnamon, flour, and vanilla extract until well combined. Set aside.
  6. On a floured surface, roll out each disk of dough into a rectangle (about ¼ inch thick).
  7. Cut into rectangles (3x4 inches) using a cookie cutter or ruler.
  8. Place half of the dough rectangles on a parchment-lined baking sheet.
  9. Spoon filling onto each rectangle, leaving a small border.
  10. Top with remaining rectangles and seal edges with a fork.
  11. Preheat oven to 375°F (190°C).
  12. Bake for 20-25 minutes or until golden brown.
  13. Mix powdered sugar, milk, and vanilla until smooth.
  14. Drizzle over cooled pop tarts and add sprinkles if desired.
  15. Allow the glaze to set before serving.
