Ingredients:

  • 2 cups (180g) rolled oats
  • 1 cup (120g) mixed nuts, chopped (e.g., almonds, walnuts)
  • 1/2 cup (75g) honey or maple syrup
  • 1/4 cup (60ml) unsweetened nut butter (e.g., almond or peanut butter)
  • 1/2 teaspoon (2g) vanilla extract
  • 1/2 teaspoon (3g) salt
  • 1/2 cup (80g) dried fruits (e.g., cranberries, raisins, apricots), chopped
  • 1/4 cup (40g) chocolate chips or dark chocolate chunks (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking pan with parchment paper, leaving an overhang on the sides.
  3. Combine rolled oats, chopped nuts, and salt in a mixing bowl.
  4. In a separate bowl, whisk together honey (or maple syrup), nut butter, and vanilla extract until smooth.
  5. Pour the wet mixture over the dry ingredients and stir until fully combined.
  6. Fold in the dried fruit and chocolate chips, if using.
  7. Transfer the mixture to the prepared baking pan and press down firmly with a spatula.
  8. Bake for 20 minutes, or until golden brown around the edges.
  9. Cool in the pan for 10 minutes, then lift out using parchment paper and let sit until fully chilled on a wire rack.
  10. Cut into bars once cooled and store in an airtight container.
