Ingredients:
- 2 cups (180g) rolled oats
- 1 cup (120g) mixed nuts, chopped (e.g., almonds, walnuts)
- 1/2 cup (75g) honey or maple syrup
- 1/4 cup (60ml) unsweetened nut butter (e.g., almond or peanut butter)
- 1/2 teaspoon (2g) vanilla extract
- 1/2 teaspoon (3g) salt
- 1/2 cup (80g) dried fruits (e.g., cranberries, raisins, apricots), chopped
- 1/4 cup (40g) chocolate chips or dark chocolate chunks (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a baking pan with parchment paper, leaving an overhang on the sides.
- Combine rolled oats, chopped nuts, and salt in a mixing bowl.
- In a separate bowl, whisk together honey (or maple syrup), nut butter, and vanilla extract until smooth.
- Pour the wet mixture over the dry ingredients and stir until fully combined.
- Fold in the dried fruit and chocolate chips, if using.
- Transfer the mixture to the prepared baking pan and press down firmly with a spatula.
- Bake for 20 minutes, or until golden brown around the edges.
- Cool in the pan for 10 minutes, then lift out using parchment paper and let sit until fully chilled on a wire rack.
- Cut into bars once cooled and store in an airtight container.
