  • 1 lb cooked shrimp, peeled, deveined, and cut into bite-sized pieces
  • 1 lb imitation crab meat, shredded into chunks
  • 1 cup celery, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, minced
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Old Bay Seasoning
  • 2 tbsp fresh dill, minced
  • 1/2 tsp black pepper, freshly cracked

Instructions:

  1. Pat the cooked shrimp and imitation crab meat dry with paper towels to ensure the dressing adheres properly. Excess water is the enemy of a creamy dressing.
  2. In a large mixing bowl, whisk together 3/4 cup mayonnaise, 1/4 cup sour cream, 1 tbsp lemon juice, 1 tsp zest, 1 tsp Old Bay, 2 tbsp dill, and 1/2 tsp pepper. Whisk until the mixture is silky and pale orange.
  3. Dice your 1 cup celery, 1/2 cup red pepper, and 1/4 cup red onion. Keep the dice small and uniform for the best mouthfeel.
  4. Add the dried shrimp, shredded crab, and diced vegetables to the dressing bowl.
  5. Use a spatula to fold the ingredients together. Fold until the seafood is completely cloaked in the zesty dressing.
  6. Grab a small piece of seafood and check for seasoning. Add a pinch more Old Bay if you want it spicier.
  7. Transfer to an airtight container. Refrigerate for at least 30 minutes until the bowl feels icy to the touch.
  8. Give it one last gentle toss before serving to redistribute any dressing that may have settled.
