Ingredients:

  • 1 French baguette, sliced into 1/2 inch rounds (250g)
  • 3 tbsp extra virgin olive oil (45ml)
  • 1/2 tsp flaky sea salt (3g)
  • 1 cup whole-milk ricotta cheese (245g)
  • 1 tbsp lemon juice (15ml)
  • 1/4 tsp cracked black pepper (1g)
  • 2 cups fresh seasonal fruit, diced (300g)
  • 4 tbsp honey (60ml)
  • 2 tbsp fresh mint or basil, torn (15g)
  • 2 tbsp crushed pistachios or walnuts (15g)

Instructions:

  1. Heat the olive oil in a skillet over medium-high heat. Arrange the baguette slices in a single layer and toast for 2-3 minutes per side until deep golden-brown and firm. Set on a wire rack to cool.
  2. In a small bowl, combine the ricotta cheese, lemon juice, and black pepper. Beat the mixture vigorously with a whisk or spatula for about 60 seconds until smooth and cloud-like.
  3. Spoon a generous dollop of the whipped cheese onto each warm toast slice. Top with a piece of diced fruit.
  4. Drizzle honey in a thin, zigzag motion across the platter and garnish with crushed nuts and a leaf of fresh mint.
