- 8 oz full-fat cream cheese, softened
- 2 cups (8 oz) shredded Swiss cheese, divided
- 8 oz cooked corned beef, finely diced
- 1 cup well-drained sauerkraut
- 1/2 cup full-fat sour cream
- 1/2 cup Thousand Island dressing
Instructions:
- Preheat the oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
- In a large mixing bowl, combine the softened cream cheese, three-quarters of the shredded Swiss cheese, diced corned beef, well-drained sauerkraut, sour cream, and Thousand Island dressing. Mix thoroughly until all ingredients are fully incorporated and the mixture is uniform.
- Spread the dip mixture evenly into the prepared baking dish.
- Top with the remaining shredded Swiss cheese.
- Bake for 20 minutes, or until the dip is bubbling around the edges and the cheese topping is melted and golden brown.
- Allow the dip to stand for 5 minutes before serving hot with rye chips, crackers, or sturdy potato chips.
