Ingredients:

  • 8 oz full-fat cream cheese, softened
  • 2 cups (8 oz) shredded Swiss cheese, divided
  • 8 oz cooked corned beef, finely diced
  • 1 cup well-drained sauerkraut
  • 1/2 cup full-fat sour cream
  • 1/2 cup Thousand Island dressing

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
  2. In a large mixing bowl, combine the softened cream cheese, three-quarters of the shredded Swiss cheese, diced corned beef, well-drained sauerkraut, sour cream, and Thousand Island dressing. Mix thoroughly until all ingredients are fully incorporated and the mixture is uniform.
  3. Spread the dip mixture evenly into the prepared baking dish.
  4. Top with the remaining shredded Swiss cheese.
  5. Bake for 20 minutes, or until the dip is bubbling around the edges and the cheese topping is melted and golden brown.
  6. Allow the dip to stand for 5 minutes before serving hot with rye chips, crackers, or sturdy potato chips.
