Ingredients:

  • 2 racks baby back pork ribs (approximately 3–4 pounds, or 1.4–1.8 kg)
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 cup (240 ml) barbecue sauce (store-bought or homemade)
  • 1/4 cup (60 ml) apple cider vinegar
  • 2 tablespoons (30 g) brown sugar
  • 1 cup (240 ml) water or broth

Instructions:

  1. Remove the membrane from the back of the ribs.
  2. Cut ribs into smaller sections (if necessary) for fitting in the Instant Pot.
  3. In a bowl, mix smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne.
  4. Rub the spice mix all over the ribs, ensuring an even coating.
  5. In a separate bowl, combine barbecue sauce, apple cider vinegar, and brown sugar; mix well.
  6. Pour water or broth into the Instant Pot.
  7. Place the ribs upright in the pot, layering them if needed.
  8. Seal the Instant Pot and cook on high pressure for 30 minutes.
  9. Allow for a natural release of pressure for 10 minutes, then quick release any remaining pressure.
  10. Preheat oven broiler (if desired for crispy texture).
  11. Brush caramelized barbecue sauce on the ribs, then broil for 2–4 minutes until sticky and slightly charred.
  12. Slice and serve with extra barbecue sauce on the side.
