- 2 racks baby back pork ribs (approximately 3–4 pounds, or 1.4–1.8 kg)
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 cup (240 ml) barbecue sauce (store-bought or homemade)
- 1/4 cup (60 ml) apple cider vinegar
- 2 tablespoons (30 g) brown sugar
- 1 cup (240 ml) water or broth
Instructions:
- Remove the membrane from the back of the ribs.
- Cut ribs into smaller sections (if necessary) for fitting in the Instant Pot.
- In a bowl, mix smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne.
- Rub the spice mix all over the ribs, ensuring an even coating.
- In a separate bowl, combine barbecue sauce, apple cider vinegar, and brown sugar; mix well.
- Pour water or broth into the Instant Pot.
- Place the ribs upright in the pot, layering them if needed.
- Seal the Instant Pot and cook on high pressure for 30 minutes.
- Allow for a natural release of pressure for 10 minutes, then quick release any remaining pressure.
- Preheat oven broiler (if desired for crispy texture).
- Brush caramelized barbecue sauce on the ribs, then broil for 2–4 minutes until sticky and slightly charred.
- Slice and serve with extra barbecue sauce on the side.
