Ingredients:
- 1 cup Steel Cut Oats
- 0.25 cup Uncooked Quinoa
- 3 cups Filtered Water
- 0.5 tsp Sea Salt
- 1 tbsp Virgin Coconut Oil
- 1 cup Whole Milk
- 1 tsp Ground Cinnamon
- 1 large Honeycrisp Apple, diced
Instructions:
- Place 1 cup Steel Cut Oats and 0.25 cup Uncooked Quinoa in a fine mesh sieve and run under cold water until the water runs clear.
- Select the 'Sauté' function and add 1 tbsp Virgin Coconut Oil. Wait for the oil to shimmer.
- Add the rinsed oats and quinoa to the hot oil. Stir constantly for about 3 minutes until they smell like toasted popcorn.
- Pour in 3 cups Filtered Water and 0.5 tsp Sea Salt. Use your spatula to scrape every single bit of grain off the bottom until the pot surface feels smooth.
- Sprinkle in 1 tsp Ground Cinnamon and half of the diced Honeycrisp Apple.
- Lock the lid and set the valve to 'Sealing.' Select Manual/Pressure Cook on High for 10 minutes.
- When the timer beeps, let the pressure release naturally for 10 minutes. Wait until the pin drops on its own.
- Open the lid and stir in 1 cup Whole Milk and the remaining diced apple.
- Let the mixture sit for 2-3 minutes. It will look thin at first but will transform until it becomes thick and velvety.
- Ladle into bowls and top with an extra pinch of cinnamon or a drizzle of maple syrup if you're feeling indulgent.
