Ingredients:

  • 1 cup Steel Cut Oats
  • 0.25 cup Uncooked Quinoa
  • 3 cups Filtered Water
  • 0.5 tsp Sea Salt
  • 1 tbsp Virgin Coconut Oil
  • 1 cup Whole Milk
  • 1 tsp Ground Cinnamon
  • 1 large Honeycrisp Apple, diced

Instructions:

  1. Place 1 cup Steel Cut Oats and 0.25 cup Uncooked Quinoa in a fine mesh sieve and run under cold water until the water runs clear.
  2. Select the 'Sauté' function and add 1 tbsp Virgin Coconut Oil. Wait for the oil to shimmer.
  3. Add the rinsed oats and quinoa to the hot oil. Stir constantly for about 3 minutes until they smell like toasted popcorn.
  4. Pour in 3 cups Filtered Water and 0.5 tsp Sea Salt. Use your spatula to scrape every single bit of grain off the bottom until the pot surface feels smooth.
  5. Sprinkle in 1 tsp Ground Cinnamon and half of the diced Honeycrisp Apple.
  6. Lock the lid and set the valve to 'Sealing.' Select Manual/Pressure Cook on High for 10 minutes.
  7. When the timer beeps, let the pressure release naturally for 10 minutes. Wait until the pin drops on its own.
  8. Open the lid and stir in 1 cup Whole Milk and the remaining diced apple.
  9. Let the mixture sit for 2-3 minutes. It will look thin at first but will transform until it becomes thick and velvety.
  10. Ladle into bowls and top with an extra pinch of cinnamon or a drizzle of maple syrup if you're feeling indulgent.
