Ingredients:

  • 4 large bell peppers
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • 1/2 cup corn kernels
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup beef broth or water

Instructions:

  1. Cut off the tops of the bell peppers and remove the seeds and membranes. Stand peppers upright.
  2. Heat olive oil in the Instant Pot using the Sauté function. Add onion and cook until softened, about 3-5 minutes. Add garlic and cook for another minute until fragrant.
  3. Add ground beef to the Instant Pot and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Stir in Italian seasoning, salt, and pepper. Remove the pot from the Sauté mode by pressing cancel. Add cooked rice, corn, and half of the tomato sauce to the ground beef mixture. Stir to combine.
  5. Spoon the ground beef mixture into the prepared bell peppers, packing it in firmly.
  6. Pour the remaining tomato sauce and beef broth (or water) into the bottom of the Instant Pot. Place the trivet inside the pot. Carefully arrange the stuffed peppers on the trivet.
  7. Secure the lid of the Instant Pot and set the valve to Sealing. Cook on Manual or Pressure Cook setting for 8 minutes.
  8. Allow the Instant Pot to naturally release pressure for 10 minutes, then quick release any remaining pressure.
  9. Carefully remove the stuffed peppers from the Instant Pot. Sprinkle with shredded cheddar cheese (if using) and serve immediately.
