Ingredients:

  • 6 cups Rice Chex cereal (180g)
  • 1 cup mini marshmallows (about 120g)
  • 1 cup white chocolate chips (170g)
  • 1 tablespoon unsalted butter (14g)
  • ½ teaspoon vanilla extract (2.5ml)
  • ¼ cup crushed Oreos or cookies (optional for garnish) (30g)

Instructions:

  1. In a microwave-safe bowl, combine white chocolate chips and butter. Heat in 30-second intervals, stirring until completely melted.
  2. Stir in vanilla extract to the melted chocolate mixture.
  3. In a large mixing bowl, add the Rice Chex cereal and mini marshmallows. Pour the melted chocolate mixture over the cereal and gently fold until evenly coated.
  4. Transfer the mixture to the lined baking dish, pressing down firmly to create an even layer.
  5. Refrigerate for at least 30 minutes or until firm.
  6. Remove from the refrigerator, lift out of the pan using the parchment paper, and cut into squares or bars. Sprinkle with crushed Oreos if desired before serving.
