Ingredients:
- 6 cups Rice Chex cereal (180g)
- 1 cup mini marshmallows (about 120g)
- 1 cup white chocolate chips (170g)
- 1 tablespoon unsalted butter (14g)
- ½ teaspoon vanilla extract (2.5ml)
- ¼ cup crushed Oreos or cookies (optional for garnish) (30g)
Instructions:
- In a microwave-safe bowl, combine white chocolate chips and butter. Heat in 30-second intervals, stirring until completely melted.
- Stir in vanilla extract to the melted chocolate mixture.
- In a large mixing bowl, add the Rice Chex cereal and mini marshmallows. Pour the melted chocolate mixture over the cereal and gently fold until evenly coated.
- Transfer the mixture to the lined baking dish, pressing down firmly to create an even layer.
- Refrigerate for at least 30 minutes or until firm.
- Remove from the refrigerator, lift out of the pan using the parchment paper, and cut into squares or bars. Sprinkle with crushed Oreos if desired before serving.
