Ingredients:

  • 1 gallon (3.8 liters) water
  • 1 cup (240 g) kosher salt
  • 1/2 cup (100 g) brown sugar
  • 4 cloves garlic, crushed
  • 2 tablespoons (30 g) black peppercorns
  • 2 tablespoons (30 g) allspice berries
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 bay leaves

Instructions:

  1. In a large pot, combine water, kosher salt, and brown sugar.
  2. Whisk until salt and sugar are fully dissolved.
  3. Stir in crushed garlic, black peppercorns, allspice berries, rosemary, thyme, and bay leaves.
  4. Let the brine cool to room temperature, then refrigerate for at least one hour.
  5. Submerge the cleaned turkey in the brine. Ensure it’s fully covered.
  6. Brine the turkey for 12 to 24 hours, flipping it halfway through for even flavor distribution.
  7. After brining, rinse the turkey under cold water to remove excess salt. Pat dry and proceed to roast as desired.
