Ingredients:
- 1 gallon (3.8 liters) water
- 1 cup (240 g) kosher salt
- 1/2 cup (100 g) brown sugar
- 4 cloves garlic, crushed
- 2 tablespoons (30 g) black peppercorns
- 2 tablespoons (30 g) allspice berries
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 bay leaves
Instructions:
- In a large pot, combine water, kosher salt, and brown sugar.
- Whisk until salt and sugar are fully dissolved.
- Stir in crushed garlic, black peppercorns, allspice berries, rosemary, thyme, and bay leaves.
- Let the brine cool to room temperature, then refrigerate for at least one hour.
- Submerge the cleaned turkey in the brine. Ensure it’s fully covered.
- Brine the turkey for 12 to 24 hours, flipping it halfway through for even flavor distribution.
- After brining, rinse the turkey under cold water to remove excess salt. Pat dry and proceed to roast as desired.
