Ingredients:

  • 1.5 lbs flank steak, sliced thin
  • 3 cups broccoli florets
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon erythritol or keto sweetener
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 2 tablespoons sesame seeds for garnish
  • Cauliflower rice or zucchini noodles for serving (optional)

Instructions:

  1. Slice flank steak into thin strips against the grain and season lightly with salt and pepper.
  2. In a mixing bowl, whisk together beef broth, soy sauce, sesame oil, minced garlic, ginger, erythritol, and red pepper flakes.
  3. Place beef strips at the bottom of the crockpot and pour the sauce mixture over the beef.
  4. Cover and cook on low for 4 hours or high for 2 hours.
  5. During the last 30 minutes of cooking, add broccoli florets and stir to combine.
  6. Once the beef is tender and broccoli is bright green, serve hot sprinkled with sesame seeds over a bed of cauliflower rice or zucchini noodles.
