Ingredients:
- 1.5 lbs flank steak, sliced thin
- 3 cups broccoli florets
- 1 cup beef broth
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon erythritol or keto sweetener
- 1/2 teaspoon red pepper flakes
- Salt and pepper, to taste
- 2 tablespoons sesame seeds for garnish
- Cauliflower rice or zucchini noodles for serving (optional)
Instructions:
- Slice flank steak into thin strips against the grain and season lightly with salt and pepper.
- In a mixing bowl, whisk together beef broth, soy sauce, sesame oil, minced garlic, ginger, erythritol, and red pepper flakes.
- Place beef strips at the bottom of the crockpot and pour the sauce mixture over the beef.
- Cover and cook on low for 4 hours or high for 2 hours.
- During the last 30 minutes of cooking, add broccoli florets and stir to combine.
- Once the beef is tender and broccoli is bright green, serve hot sprinkled with sesame seeds over a bed of cauliflower rice or zucchini noodles.
