Ingredients:

  • 8 oz (225g) Full-fat cream cheese, softened to room temperature
  • 1/2 cup (153g) Sweetened condensed milk
  • 1/4 cup (62g) Key lime juice
  • 1 tsp (2g) Fresh lime zest
  • 2 tbsp (15g) Graham cracker crumbs

Instructions:

  1. Place the softened cream cheese in a medium mixing bowl. Beat on medium speed until it looks like smooth, thick frosting.
  2. Slowly pour in the 1/2 cup (153g) sweetened condensed milk while continuing to mix.
  3. Scrape the sides of the bowl to ensure no hidden cream cheese clumps remain.
  4. Add the 1/4 cup (62g) key lime juice in a slow, steady stream.
  5. Whisk for 2 minutes until the mixture visibly thickens and holds a soft peak.
  6. Fold in 1 tsp (2g) of fresh lime zest using a spatula.
  7. Transfer the mixture to a serving bowl and cover tightly with plastic wrap.
  8. Chill in the refrigerator for at least 30 minutes to allow the proteins to set firmly.
  9. Sprinkle with 2 tbsp (15g) graham cracker crumbs just before serving so they stay crisp and don't get soggy.
