Ingredients:

  • Lots of crushed ice
  • 1/2 cup (120 ml) fresh lime juice, plus lime wedges for garnish
  • 3-4 tablespoons (45-60 ml) super fine granulated sugar, or to taste
  • 1 handful fresh mint leaves, plus large sprigs of mint to garnish
  • 3 ripe kiwi, peeled and sliced into rounds
  • 1 cup (240 ml) white rum
  • Splash of club soda, per glass
  • Lime wedges
  • Kiwi slices
  • Mint sprigs

Instructions:

  1. In a cocktail shaker, stir together lime juice and sugar until sugar is completely dissolved.
  2. Add mint leaves and a few kiwi slices to the shaker. Gently muddle until fruit and mint are crushed and fragrant. Don't over-muddle – you just want to release the flavors, not pulverize the leaves!
  3. Add rum and a handful of crushed ice to the shaker. Stir well to combine and chill.
  4. Fill four glasses with crushed ice. Add mint sprigs, kiwi slices, and lime wedges to each glass.
  5. Divide the mojito mixture between the four glasses. Top each glass with a splash of club soda.
  6. Add a straw to each glass and serve immediately.
