Ingredients:

  • 2 (6-8 ounce) salmon fillets, skin on or off
  • 2 tablespoons olive oil (30ml)
  • 1 lemon, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs, chopped (dill, parsley, thyme, or a mix) (30ml)
  • 1/4 teaspoon salt (1.5g)
  • 1/4 teaspoon black pepper (1.5g)
  • Optional: 1 tablespoon capers (15ml)

Instructions:

  1. Preheat oven to 400°F (200°C). Prepare two large sheets of foil (enough to completely wrap each salmon fillet).
  2. Place each salmon fillet on a separate sheet of foil.
  3. In a small bowl, combine olive oil, minced garlic, herbs, salt, and pepper.
  4. Spoon the herb mixture evenly over each salmon fillet. Top with lemon slices. Add capers if desired.
  5. Fold the foil over the salmon to create a sealed packet, crimping the edges tightly to prevent steam from escaping. Leave a little room for steam to circulate.
  6. Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
  7. Carefully open the foil packets (watch out for the steam!). Serve immediately.
