Ingredients:
- 2 (6-8 ounce) salmon fillets, skin on or off
- 2 tablespoons olive oil (30ml)
- 1 lemon, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs, chopped (dill, parsley, thyme, or a mix) (30ml)
- 1/4 teaspoon salt (1.5g)
- 1/4 teaspoon black pepper (1.5g)
- Optional: 1 tablespoon capers (15ml)
Instructions:
- Preheat oven to 400°F (200°C). Prepare two large sheets of foil (enough to completely wrap each salmon fillet).
- Place each salmon fillet on a separate sheet of foil.
- In a small bowl, combine olive oil, minced garlic, herbs, salt, and pepper.
- Spoon the herb mixture evenly over each salmon fillet. Top with lemon slices. Add capers if desired.
- Fold the foil over the salmon to create a sealed packet, crimping the edges tightly to prevent steam from escaping. Leave a little room for steam to circulate.
- Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
- Carefully open the foil packets (watch out for the steam!). Serve immediately.
