Ingredients:

  • 2 (6-ounce/170g) salmon fillets, skin on or off, preferably wild-caught
  • 2 tablespoons olive oil (30 ml)
  • 1 lemon, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (10g)
  • 2 tablespoons fresh dill, chopped (10g)
  • 1/2 teaspoon dried oregano (1.25 ml)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. In a small bowl, combine olive oil, minced garlic, chopped parsley, dill, oregano, salt, and pepper.
  3. Place salmon fillets on the prepared baking sheet.
  4. Brush the salmon fillets with the herb mixture. Top with lemon slices.
  5. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. This is the perfect baking salmon recipe.
  6. Use a meat thermometer to check for an internal temperature of 145°F (63°C).
  7. Serve immediately.
