Ingredients:
- 4 (6-ounce/170g) salmon fillets, skin on or off
- 1 tablespoon/15ml olive oil
- Salt and freshly ground black pepper to taste
- 1/4 cup/30g breadcrumbs (Panko preferred)
- 2 tablespoons/30ml unsalted butter, melted
- 1 tablespoon/15ml lemon juice, freshly squeezed
- 1 tablespoon/15ml fresh parsley, chopped
- 1 tablespoon/15ml fresh dill, chopped
- 1 teaspoon/5ml lemon zest
- 1 clove garlic, minced
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
- Pat salmon fillets dry with paper towels. Place them on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
- In a small bowl, combine breadcrumbs, melted butter, lemon juice, parsley, dill, lemon zest, and garlic. Mix well.
- Evenly distribute the lemon-herb mixture over the top of each salmon fillet, pressing gently to adhere.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Serve immediately and enjoy!
