Ingredients:

  • 4 (6-ounce/170g) salmon fillets, skin on or off
  • 1 tablespoon/15ml olive oil
  • Salt and freshly ground black pepper to taste
  • 1/4 cup/30g breadcrumbs (Panko preferred)
  • 2 tablespoons/30ml unsalted butter, melted
  • 1 tablespoon/15ml lemon juice, freshly squeezed
  • 1 tablespoon/15ml fresh parsley, chopped
  • 1 tablespoon/15ml fresh dill, chopped
  • 1 teaspoon/5ml lemon zest
  • 1 clove garlic, minced

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
  2. Pat salmon fillets dry with paper towels. Place them on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. In a small bowl, combine breadcrumbs, melted butter, lemon juice, parsley, dill, lemon zest, and garlic. Mix well.
  4. Evenly distribute the lemon-herb mixture over the top of each salmon fillet, pressing gently to adhere.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  6. Serve immediately and enjoy!
