Ingredients:
- 4 (6-ounce/170g) salmon fillets, skin on, pin bones removed
- 2 tablespoons olive oil (30ml)
- 2 tablespoons fresh lemon juice (30ml), about 1 lemon
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley (8g)
- 1 tablespoon chopped fresh dill (4g)
- 1 teaspoon dried oregano (2g)
- 1/2 teaspoon salt (3g)
- 1/4 teaspoon black pepper (0.5g)
- 1 lemon, thinly sliced (for garnish, optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, parsley, dill, oregano, salt, and pepper.
- Place the salmon fillets, skin-side up, on a baking sheet lined with parchment paper or aluminum foil. Brush the marinade evenly over the salmon.
- Roast in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- For extra crispy skin, broil for the last 1-2 minutes, watching carefully to prevent burning.
- Garnish with lemon slices (optional) and serve immediately.
