Ingredients:

  • 2 medium zucchinis, sliced into 1/2-inch rounds
  • 1 small lemon, juiced and zested
  • 1 tbsp extra-virgin olive oil
  • 1 tsp lemon pepper seasoning
  • 1/4 tsp garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the zucchini slices with olive oil, lemon pepper seasoning, and garlic powder until every slice is thinly coated.
  3. Arrange the zucchini slices in a single layer on the prepared baking sheet, leaving space between each slice to prevent steaming.
  4. Roast for 12–15 minutes, then flip the slices using tongs and roast for another 10 minutes until the edges are mahogany-colored and centers are tender.
  5. Remove the pan from the oven and immediately sprinkle the grated Parmesan over the top.
  6. Drizzle fresh lemon juice over the slices and garnish with fresh parsley and lemon zest before serving.
