Ingredients:
- 2 medium zucchinis, sliced into 1/2-inch rounds
- 1 small lemon, juiced and zested
- 1 tbsp extra-virgin olive oil
- 1 tsp lemon pepper seasoning
- 1/4 tsp garlic powder
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions:
- Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the zucchini slices with olive oil, lemon pepper seasoning, and garlic powder until every slice is thinly coated.
- Arrange the zucchini slices in a single layer on the prepared baking sheet, leaving space between each slice to prevent steaming.
- Roast for 12–15 minutes, then flip the slices using tongs and roast for another 10 minutes until the edges are mahogany-colored and centers are tender.
- Remove the pan from the oven and immediately sprinkle the grated Parmesan over the top.
- Drizzle fresh lemon juice over the slices and garnish with fresh parsley and lemon zest before serving.
